The other day (Monday to be specific) I had a bad day. The Mr. was home and I was at work, and that just sort of set the mood for the day. And when my best friend texted and told me that she also had the day off and was lounging about reading Harry Potter, I really got in a grumpy mood. But then, when the Mr. texted and said that he was going to the food store and asked if I had a list, the day started to look a bit better. I went over to my parent’s house this weekend and my mom was making chicken soup. I had been craving it since, so I quickly jumped on the Mr.’s offer and gave him the food items I would need.
When I got home, it turned out that the Mr. had forgotten his cell phone (aka my chicken soup ingredients text) at home when he went to the store. He had tried to get everything on my list, but forgot a few veggies, the correct rice, and a few other things. bah humbug. (although I couldn’t be/ wasn’t upset with him because he had done so much around the house when I was at work!)
Instead of getting upset (well out loud at least – we are all human!) I decided to work with what we had in the kitchen. I threw together 3 types of peppers, carrots, corn, chicken, lots of cumin and red pepper seasoning, rice pilaf, and chicken stock. At the last second I also added a can of black beans. The result was spectacular, and was even better than the traditional chicken soup I had been planning on making.
