As I mentioned last week, I have been meaning to make pesto for quite some time. It is one of my favorite summer pasta toppings ( I prefer my pesto and pasta room temperature or cooler). I finally got around to making pesto – despite the fact that it is fall- while Ringo and I were hanging out on Sundays afternoon. I don’t remember who taught me how to make pesto, but it is a food that is best when freshly made in my opinion. I used basil leaves, pine nuts, garlic, olive oil and parmesan cheese. I make it by taste, and add to the basil leaves until I am satisfied with the flavor.
