Homemade Bruschetta

One of my close friends just launched her new website, The Bad Vegetarian. Although I am not a vegetarian myself, I do try to limit the amount of meat that I eat every week. The website is great, because it offers delicious vegetarian options for people who are trying to find meals without meat. I decided to upload an easy bruschetta recipe that  I made a few times in college. I gave the fiancé and Brian (the fiancé’s friend who is staying with us for the summer) a taste to make sure that they approved, and the entire batch disappeared in less that 5 minutes. I decided this meant that it was officially ok to share the recipe with the world, so I posted it here. NOTE: The link is in! Click HERE to go to the bruschetta recipe!

Since I didn’t have any crackers to serve the bruschetta on, I took some italian bread and cut it into thin strips and cut it in half (I would have preferred french bread, so I didn’t have to cut the circles in half, but I didn’t have any on hand) and then quickly fried them in some heated olive oil over the stove. I put a generous serving of olive oil (I eyed it, but it would probably be about a cup total) and heated it until it was just bubbling. I then popped the small slices of bread into the pan, waited about 30 – 45 seconds and then turned and waited another 30 – 45 seconds. The result was a lightly toasted platform to serve the bruschetta on!
